- 3 tbs olive oil
- ½ cup of lemon juice
- ½ red onion
- 1 red capsicum
- 1 cucumber
- Fresh red chilli, deseeded (add more if you like it hot!)
- 1 Dozen Mt. Martha Oysters
Dice the capsicum and cucumber, thinly slice the red onion and the chilli.
Add into a bowl with olive oil and lemon juice.
Spoon onto freshly shucked oyster a serve.
