Fresh Oysters with Summer Salsa

  • 3 tbs olive oil
  • ½ cup of lemon juice
  • ½ red onion
  • 1 red capsicum
  • 1 cucumber
  • Fresh red chilli, deseeded (add more if you like it hot!)
  • 1 Dozen Mt. Martha Oysters


Step 1

Dice the capsicum and cucumber, thinly slice the red onion and the chilli.

Step 2

Add into a bowl with olive oil and lemon juice.

Spoon onto freshly shucked oyster a serve.
