Mussels need to be cooked quickly. Cook separately in a pan with an inch of water in the bottom, bring to a boil, place mussels into the pot with the lid on. Keep on full heat for approx 5 minutes the steam will quickly cook the mussel and this way most will open. Once opened they are cooked. Overcooking will shrink the mussel meat.
Mussels will sometimes not open when cooked, this occurs as the mussels being super fresh will hold a bit of seawater which reduces the heat shock effect which causes them to open. If they don't open apply a bit more heat or open with a knife. Please see our video “Murray the Mussel” which explains the issue.
Cleaning our mussels is not required as they are cleaned on the boat when harvested through our machinery. Removing the beards before cooking is best and is done by gripping and pulling down and out.
Raw mussels can be eaten, a dash of lemon compliments them magnificently.
